Ingredients

1 Hot and Spicier Ramen Express
1 cup watermelon, diced
1/2 tablespoon gochujang paste (optional)
1/4 cup noodle broth
1/2 tablespoon tajin spice (for rimming the bowl)
lime wedges

Garnish: Watermelon slices

Instructions

Cook the ramen according to package directions. Rinse and drain ramen in ice water. Set aside 1/4 cup noodle broth. Blend watermelon, gojuchang and noodle broth in a blender. Alternatively grate the watermelon. Blend until smooth consistency. To rim the bowl add some tajín to a shallow plate. Run a lime wedge around the rims of a bowl, then dip the rim lightly in the Tajín. Place ramen in the bowl. Add the watermelon mixture and top with watermelon slices and drizzle with freshly squeezed lime.
